Scope
This standard specifies the method for the instrumental determination of wet gluten content in wheat and wheat flour (including common wheat and durum wheat). This part can be used directly for the gluten test of wheat flour, and can also be used for the gluten test of durum wheat granule flour or common wheat whole wheat flour (the grain thickness meets the requirements specified in Table B.1 in Appendix B).
