Scope
This standard specifies a method for the determination of wet gluten content in wheat (including common wheat and durum wheat) and wheat flour by the hand-washing method. This part can be directly used for the determination of gluten in wheat flour, and can also be used in the determination of gluten in durum wheat granular flour or common wheat whole wheat flour (the particle thickness meets the requirements specified in Table A.1 in the appendix).
