This document applies to ovens that use electricity as the energy source for continuous or batch baking operations. Ovens using other forms of energy (such as gas or oil) (if applicable) can refer to this document for implementation. This document applies to: --- Industrial electric food ovens; --- Commercial electric forced convection ovens and steam convection ovens; --- Commercial electric ovens and toaster ovens; --- Commercial electric stoves, oven.
