This document specifies the basic requirements for the quality grading of beef carcasses and meat cuts, the requirements for quality grading, marking, packaging and recording, and describes the evaluation methods of technical indicators and quality grades for beef carcasses and meat cuts. This document is applicable to the beef quality grading of beef cattle (except yak, buffalo and calf).
