Scope

This standard specifies the principle of the method for determining the dry gluten content of wheat flour, the instruments, utensils, operation steps, result presentation and the calculation of gluten water absorption. This standard applies to the determination of dry gluten content and the water absorption of gluten of various wheat flour and whole wheat flour.
