Scope
This International Standard specifies a method for the detection of larvae of Trichinella spp. in the muscle phase (muscle larvae) in the meat of individual carcasses intended for human consumption. It is applicable to the examination of meat from domestic and wild species (from the domestic and sylvatic cycle) that may be infected with nematodes of the genus Trichinella. This method does not allow determination of the species or genotype of the parasites detected; a determination of the species or genotype can be carried out using molecular methods. The procedure described in this International Standard is intended to be used in conjunction with the guidelines in the OIE Manual on Testing Methods and Vaccines and by the International Commission on Trichinellosis (ICT) for testing for Trichinella and checking carcasses, intended for human consumption, unless it has been otherwise demonstrated that the animal did not pose a risk of exposure to Trichinella. The magnetic stirring method for artificial digestion is considered a standard method because it has been proven in validation studies to produce the most reliable results. NOTE Alternative methods of analysis may be used provided that equivalence can be documented using the method described in this International Standard.
