Scope
This International Standard specifies the determination of the degree of is merization of diacylglycerols in fatty substances of plant origin. 1,2-diacylglycerols are converted into more stable 1,3-is mers during storage or by acid catalysis The mass fraction of 1,2-diacylglycerols can constitute a quality criterion for fatty substances of plant origin.
