This standard specifies a reference method for determining ash. The process is applicable to caseins obtained by rennet coagulation and to caseinates with the exception of ammonium caseinate. Note: For acid caseins, ammonium caseinates and their mixtures with rennet casein and with caseinates as well as caseins of unknown types, the ash is determined as bound ash according to DIN 10451.
