This section specifies the principles, equipment adjustments and operating methods of the Brabender Quadrumat Jr. experimental mill. This section is applicable to the evaluation of grinding wheat flour required for dough physical experiments and producing high-ash wheat flour. It is applicable to the evaluation of wheat flour quality using farinogram curves among laboratories. It is not applicable to the determination of wheat flour extraction rate.
