Scope
This standard stipulates the basic principles of slaughtering and meat processing, primary production, design and environmental sanitation of slaughtering and meat processing enterprises, workshops and equipment facilities, hygiene control of slaughtering and processing, packaging, storage, transportation hygiene, personnel requirements, Hygienic quality system and its operation requirements. This standard is applicable to animal slaughter plants, meat cutting plants, meat processing plants, cold stores for meat and its products, etc. approved and registered by the competent government department.
