Scope
This standard specifies the method for determination of trypsin inhibitor activity in soy products. Trypsin inhibitor activity can be used to indicate the degree of roasting of soy products. This standard is applicable to the determination of trypsin inhibitor activity in soy products. The detection limit of this method is 0.5 mg/g.
