Scope
Anthocyanins in blueberries mainly exist in the form of anthocyanins. After ultrasonic extraction of anthocyanins from the sample with a strong acidic solution of ethanol and water, the anthocyanins were hydrolyzed into anthocyanins in a boiling water bath, and then detected with a liquid chromatography tandem mass spectrometer and quantified by an external standard method.
