Scope
This document specifies the terms and definitions of fresh wet rice noodles, product classification, requirements, food additives, hygienic requirements for production and processing, inspection methods, inspection rules, labels, signs, packaging, transportation, storage and shelf life. This document is applicable to production using rice (or brown rice) as the main raw material (≥90%), which is washed, soaked, refined (or crushed), mixed, fermented (or not fermented), matured, formed, cooled, packaged, etc. Prepackaged fresh wet rice noodles such as cut noodles (ho noodles, rolled noodles) or pressed noodles (round noodles) processed by technology.
