Scope
Based on my country's existing red adzuki bean standards and northern Shaanxi red adzuki bean testing data, the sensory requirements, quality indicators, nutritional quality indicators and quality and safety index of northern Shaanxi red adzuki beans are proposed. Sensory index shape: prismatic, with one end neat and one oval, with obvious edges and corners, and the bottom of the umbilicus is slightly sunken; quality index: pure grain rate ≥98%, imperfect grain content ≤3.0%, heterochromatic grains ≤2.0%, Total impurities ≤ 1.0%, including: inorganic impurities ≤ 0.5%, moisture content ≤ 14.0 (g/100g), color and smell: normal; nutritional quality index crude protein content (on a dry basis) ≥ 23.0 (g/100g) , starch content (on a dry basis) ≥ 54.0 (g/100g); quality safety index PN ≤ 0.7.
