This document stipulates the terms and definitions of Changdao Spanish mackerel dumplings, raw and auxiliary material requirements and ratios, production processes, quality requirements, hygiene requirements, plating and transmission and other requirements. This document is applicable to the production of large mackerel dumplings with Changdao characteristics that are operated by catering enterprises and are sold fresh and frozen.
