This document describes the principle, reagents, instruments and equipment, sample preparation, experimental procedures, result calculation and precision of the dual-wavelength spectrophotometric method for the determination of amylose and amylopectin content in potatoes. This document is applicable to the determination of amylose and amylopectin content in potatoes. The detection limits of amylose and amylopectin in potatoes are 0.2g/100g and 0.1g/100g respectively.
