Introduction

Standard Background and Industry Significance

As the market size of freshly brewed tea drinks exceeds 200 billion yuan, TVZCSTEA 00023-2021, as the first industry standard specifically for freshly brewed milk tea, was jointly formulated by the Cross-Strait Tea Industry Exchange Association and 14 institutions. The standard fills the gap in standardized production and food safety control of freshly brewed tea drinks.

Key points for raw and auxiliary material control

Typical case: A chain brand used non-standard non-dairy creamer, which resulted in excessive microorganisms. According to clause 4.1.9 of the standard, the non-dairy creamer must comply with QB/T 4791. After rectification, the product qualification rate increased to 99.2%.

Key control items include:

  • Pesticide residues in tea must comply with GB 2763
  • Dairy products must meet GB 19645/GB 25191
  • Ice-making water must comply with GB 5749

Production process specifications

Chapter 5 of the standard clearly requires:

  1. Tea soup must be used within 6 hours
  2. The shaking tea process must ensure uniformity
  3. The operating environment must comply with GB 31654

Implementation suggestions

Enterprises should establish:

  • Raw material traceability system (pay special attention to clause 4.1.13)
  • 2-hour sales limit mechanism (refer to 6.1.2b)
  • Sugar content labeling system (graded according to clause 7.1)

Technological evolution: Compared with traditional tea beverage standards, new quantitative indicators for milk cap thickness (Clause 3.2) and timeliness requirements for freshly made products (Clause 6.1.2) are added.
